As much as I’m a fan of cake, sometimes it’s just nice to something a little more fresh and a little more healthy.
I say healthy loosely, because this little number does involve some serious clotted cream and a sprinkle of brown sugar, but it feels healthier and it’s lighter on the tum too, while taking advantage of some gorgeous British strawberries.
Serves four as a light dessert.
A punnet of strawberries.
Some clotted cream.
Juice two to three limes.
A few basil leaves.
Chop your strawberries into bitesize chunks – or however you like – and tumble, evenly divided, into your bowls. Sprinkle each bowl of strawberries with brown sugar – don’t go too crazy, this is supposed to be healthy, right?
Roll your limes on a surface before cutting them in half – helps loosen the juice. Squeeze half a lime over each bowl of strawberries and sugar. Use more lime juice if you want or need it.
Leave your strawberries and limey dressing to sit, while you roughly chop some fresh basil.
Scoop a generous dollop of clotted cream on top of each pile of strawberries and the sprinkle your chopped basil on top.
Serve, but make everyone wait while you Instagram it, and then eat with a glass of Pimms.
